I am going to give you a simple recipe with potatoes which goes very well with Rice and rotis.

Ingredients :

Potato ( Boiled.peeled and cut into small pieces ) – 1 cup
Turmeric Powder – 1/4 tsp (optional)
Mustard Seeds – 1/2 tsp
Aniseed/Fennel seeds – 1/2 tsp
Urad dhal – 1/2 tsp
Asfoetida – 1/4 tsp (optional)
Curry leaves – a few
Garlic (crushed) – 4 flakes
Cumin Powder – 1 tsp
Chilli Powder – 1/2 tsp
salt – as needed.

Method

  1. In a bowl, add the Potatoes, salt, turmeric powder, cumin powder, chilli powder, mix well and keep aside.
  2. Heat the oil in a kadai / pan and add the mustard seeds and let them splutter.
  3. Add urad dhal, fennel seeds, curry leaves, garlic, asafoetida and saute till garlic turns golden brown.
  4. Add the potato mixture, sprinkle little water, mix well and cook for 5 mins in a low flame. Serve hot.

Note:

Tastes best with Curd rice and Sambar Rice
